Mango-Pomegranate Yoghurt Salad Strain 2 cups yoghurt of all the excess water. Add 1 Tbsp fresh ginger juice, 3 tsp honey and ½ tsp cinnamon powder to it and beat very lightly to mix. Add 2 medium mangoes, peeled and cut into chunks, and the seeds of 1 medium pomegranate to the yoghurt. Garnish with a sprig of mint.

Tropical Smoothie Juice of 1 lime; 1.2 cup tofu (available at gourmet food stores); 400ml mango pulp; 1 medium-sized pineapple, diced; 1 cup curd; plenty of ice For the ginger syrup A 2-inch piece of ginger, crushed with 4tbsp sugar Put the crushed ginger and sugar in a pan with 1 cup water. Bring to a boil and simmer for 10 minutes. Cool and strain. Combine all ingredients for the shake with 6tbsp ginger syrup and blend in a food processor. Strain and serve chilled.

Red Pepper & Mango Salsa 2 ripe mangoes, peeled, stoned and diced; 1.2 red onion, chopped; 1.2 red bell pepper, chopped; 2 jalapeno chillies, seeds included, finely chopped (available in gourmet food stores); salt, to taste, 3tbsp chopped fresh dhania (coriander); 3tbsp lime juice Combine all ingredients by hand. Stand for 30 minutes or so to allow the flavours to blend. This is a great accompaniment to a meal and fantastic with chips as a starter. It will keep in the fridge for 2-3 days.

Mango-Lime Cooler Peel, cut and puree 1 large mango in a blender. Juice 1 orange and 1 lime and add. Mix well. Pour into glasses, over ice. Top with club soda or water. Garnish with mint or lime zest.
